Chocolate Orange & Cardamom Cake

What you will need:

3/4 cup of plain flour

3/4 cup of ground almonds

1 teaspoon of baking powder

1 teaspoon of baking soda

1/2 teaspoon of ground cardamom

3 large eggs

3/4 cup of sugar

zest of two blood oranges

1 teaspoon of vanilla extract (I used @foodie_flavours natural extracts)

1 teaspoon of orange extract

1/2 cup of dark chocolate drops

2 tablespoons of orange juice

4 tablespoons of powdered sugar

Chocolate Orange & Cardamom Cake

Please try this Chocolate Orange Cardamom Cake recipe because it’s crazy good! I’m not exaggerating to say this is one of best cake recipes I’ve ever tasted.

Gently spiced with cardamom, which aids digestion and balances blood sugar, it is extremely moist, with a beautiful taste from the blood oranges I used alongside dark craft chocolate - this one is a keeper.

This cake is so moist and delicate it doesn’t really need anything alongside it but some plain Greek yoghurt would be very complimentary or if eating it warmed, perhaps with vanilla ice cream.

How to make it:

1. Weigh out the plain flour, ground almonds, baking powder and baking soda, ground cardamom. Set aside.

2. Whisk the eggs with the sugar until creamy

3. Add the oranges zest, vanilla extract and orange extract .

4. Add the olive oil and orange juice from the same blood oranges and whisk till well blended.

5. Fold in the dry ingredients and then the dark chocolate drops.

6. Bake for 45 minutes at 180c

7. Whilst it is cooking mix the remaining orange juice with the powdered sugar in a pan heat gently until it forms a syrup.

8. When the cake is slightly cooled, prick with a fork and pour over the syrup.
