(No flour) Chocolate Expresso Almond & Ricotta Cake

Chocolate Almond & Ricotta Cake

This absolutely deliciously soft and gooey cake is a chocolate lovers dream.

To make it:

1. Melt the dark chocolate and extra virgin olive oil. Let it cool down.

2. In your food processor , whisk the ricotta with the eggs for 30 seconds.

3. Whisk in the cooled chocolate and oil mixture.

4. Add the coconut sugar, almond milk, vanilla extract, coffee extract. Whisk for 30 seconds.

5. Finally blend together in a separate bowl, baking powder, organic cocoa powder (I use @naturya), ground almonds. Stir into the wet mix until blended to a smooth batter.

6. Pour into a parchment lined baking pan and cover with flaked almonds.

7. Cook for 1 hour at 180c

What you will need:

100g of dark chocolate

1/4 cup extra virgin olive oil

250g ricotta

3 medium eggs

1/2 cup of coconut sugar

1 cup of almond milk

1 teaspoon of vanilla extract

1 teaspoon of coffee extract

3 teaspoons of baking powder

1/3 cup of organic cocoa powder (I use @naturya)

2 cups of ground almonds
