Almond & Ricotta Cake

Italian Almond and Ricotta Cake

What you will need:
80z ricotta
3 large eggs or 4 medium
Zest of 3 lemons
250g grounds almonds
1 teaspoon of almond essence
1 teaspoon of vanilla extract
100ml olive oil
200g coconut sugar
75g flaked almonds
A little sifted Icing sugar to finish

OH MY WORD….if you’re looking for gooey stodge without the feeling of a heavy sponge cake then this could be it.

We ate it still warm with a dollop of ice cream. No regrets! because almonds contain lots of healthy fats, fibre, protein, magnesium, and vitamin E.

The health benefits of almonds include lower blood sugar levels, reduced blood pressure, and lower cholesterol levels. They can also reduce hunger and promote weight loss.

How to make it:
1. Separate the eggs

2. With a balloon whisk and your food mixer, whisk the egg whites with 75g of the sugar until stiff peaks

3. In a bowl beat the remaining sugar, lemon zest, vanilla and almond extract and oil

4. Add the egg yolks one at at time

5. Mix in the almonds

6. Beat in the ricotta cheese

7. Fold in the stiff egg whites

8. Pour into a lined baking tin and top with the flaked almonds

9. Bake at 160c for 50 minutes

10. Sprinkle with sifted icing sugar when cool
