Massive Apple Muffins with Activated Walnut & Cinnamon Crumble

Making full use of the seasons local apple harvest I made these quite large apple muffins (the bigger the better!) and topped them with a crumble made from activated walnuts gifted by @2die4livefoods_europe a little unrefined sugar and cinnamon from @seasonedpioneers

My favourite nut by far, walnuts are reportedly a great prebiotic aiding gut health by feeding the gut microbiome. Walnuts also contain calcium, iron, potassium, magnesium, folate, zinc, copper, selenium, vitamin C, and niacin. In an activated form, these nutrients are more easily digested.

Massive Apple Muffins with Walnut & Cinnamon Crumb

Here’s how to make them :

1. Beat the oil and sugar till creamy
2. Add the extracts and egg and mix till combined
3. Add the flour and apple and mix till combined
4. Add the yoghurt and fold till combined
5. Spoon the batter into 6 large muffin cases.
6. Mix the crumble ingredients and generously sprinkle onto the muffins before baking for 25 minutes at 180c

What you will need :

1 cup gluten free self raising flour
6 tablespoons of coconut sugar
1/2 teaspoon of almond extract
1/2 teaspoon of vanilla extract (I used @foodie_flavours )
1 egg
3 tablespoons of extra virgin olive oil
1/4 cup of strained yoghurt (I used @iseyskyruk )
1 cup of finely chopped apple

For the crumble :
2 heaped teaspoons of cinnamon
1 tablespoon of coconut sugar
1/3 cup of walnuts ground to a coarse crumb
