Cauliflower Cheese Soup with Crispy Sage and Toasted Hazelnuts
How could I forget how much I love you, cauliflower cheese soup! Cauliflower is high in vitamins C and K, and is also a good source of folate, which supports cell growth and is essential during pregnancy. Cauliflower is fat-free and cholesterol-free and low in sodium.
But the main reason to make this it is stupidly deep in flavour and gives you a big warm hug inside ā¦.
What you will need:
Half a large cauliflower head and some of the leaves
200 ml milk or almond milk
350ml vegetable stock
Half a can of white beans (I use @bionaorganic butter beans)
A pinch of nutmeg and cayenne pepper
1 teaspoon of mustard
1 teaspoon of gf Worcestershire sauce 60g cheese (I use @godminster vintage cheddar)
How to make it:
1. Put all the ingredients EXCEPT the mustard , cheese and Worcestershire sauce into your soul blender and d choose the smooth soup programme.
2. When complete add the remaining ingredients and pulse to blend.
3. To serve add chopped toasted hazelnuts and some crispy sage. I usually just pop the sage on top of the hazelnuts in the oven when Iām roasting them. It fills the kitchen with a wonderful smell.
