A beast of a brownie made without refined sugar or added fat
Date Brownie
If like me you have a sweet tooth but try to consume mindfully, you will love this brownie recipe, which has no added fat and swaps refined sugar for chicory root syrup and soaked dates.
Both dates and chicory root are a great source of fibre that support gut health and regular bowel movements. Chicory root gets its prebiotic fibre from inulin that also helps with blood sugar control.
How to make it:
Soak the dates in hot water for 20 minutes, drain and pulse to a date syrup
Beat the date syrup with the eggs, vanilla, almond milk, nut butter and chicory root syrup
Meanwhile combine the dry ingredients: cacao powder, baking soda and coconut flour
Fold the dry ingredients into the wet mixture but don’t beat or turn this over too much as the coconut flour is very absorbent
Turn into a parchment lined baking tray and spread the mixture out keeping it at leats an inch thick
Bake for 30 minutes at 180C
Let cool and best kept in the fridge for stodgy, condensed fudge like experience!
You can freeze this happily or it will keep in the fridge for a week
What you will need:
2 tablespoons of coconut flour
1/3 of a cup of cacao powder (I used @naturya)
1/2 teaspoon of baking soda
2 large eggs
1/4 a cup of almond milk
3/4 of a cup of crunchy almond or peanut butter (I used @pip&nut)
1/4 of a cup of chicory root syrup (I used @dillonsorganics)
6 medjool dates
1 teaspoon of vanilla extract
1 cup of dark and milk chocolate chips
