Pistachio Dukkah
I love this versatile dukkah that you can make and store, to use it again and again. Use it with an olive oil dip for warm bread (dip your bread in the dukkah post dunking in your oil), sprinkle it onto hummus or yoghurt or use it to add texture to soups and salads.
Pistachios provide a balanced mix of macronutrients, including protein and fiber, which are excellent for muscle building and digestion. I’ve used activated nuts from @2die4livefoods_europe
The goal of activating nuts (through soaking and low-heat drying) is to reduce anti-nutrients like phytates to improve mineral absorption and digestibility. You should avoid heat-activating activated nuts because high temperatures destroy the enzymes and minerals they were activated to release. So my dukkah is cold processed and will happily keep in a cool cupboard for several weeks.
To the roughly chopped nuts, I added spices: cumin and coriander as well as sesame and fennel seeds. This mix has many health benefits but is designed specifically to aid digestion by stimulating enzymes, reducing bloating, and increasing bile release.

What you will need:
3/4 cup of pistachios
1 teaspoon of dried cumin
1 teaspoon of dried coriander
1/2 teaspoon of fennel seeds
1/4 cup of sesame seeds
1/2 teaspoon of sea salt
How to make it:
Roughly chop the nuts
Add the rest of the ingredients and roughly mix with a spoon
Store in an airtight container in a cool cupboard
