Bean Burger with Beets & Slaw
Mushroom, Tofu & Black Bean Patties, stacked with Beetroot and Apple Salad, Turmeric Coleslaw & Two Potato Fries
A great weekend plate, it didn’t need the bun and is better naked, unless you’re a wicked brioche bun maker, which I’m not.
To make the patties for 2:
1. Take 160g firm smoked tofu and 100g of mushrooms. Cover a baking dish with parchment, a little garlic, a tablespoon or two or soy or tamari and bake the mushrooms and tofu for 20 mins at 180c
2. Combine 2 tablespoons of black beans, 2 tablespoons of roast onion (precooked) a couple of tablespoons of buckwheat or plain white flour, 1 tablespoon of tomato puree, 1/4 teaspoon of paprika, 1 teaspoon of garlic powder, 1/2 tablespoon of nutritional yeast, salt and pepper and blend in a food processor
3. add in the cooked mushroom and tofu mixture and pulse to mix
4. shape into 4 patties and leave in the fridge until needed
To make the two potato fries:
1. slice sweet potato and red potato (skin on) and air dry or roast to make your fries
To make the beetroot salad:
1. shred fresh beetroot and apple and add a little olive oil and mashed garlic clove - set aside (beetroot is now in season and mine was sourced from @kneppwildingkitchen )
To make the turmeric coleslaw:
1. Shred carrot and cabbage
2. whisk 1 teaspoon of dijon mustard, 1-2 tablespoons of @stokes_sauces mayonnaise, 1 tablespoon of apple cider vinegar, 1/2 tablespoon of maple syrup, 1/2 teaspoon of sweet paprika, 1 teaspoon of turmeric (I used @seasonedpioneers ).
3. toast a couple of tablespoons of sliced almonds
4. combine the nuts, dressing, carrot and cabbage
To serve:
1. Oil and heat a shallow pan and brown the patties on both sides
2. spread a little hot sauce (I used @stokes_sauces habanero sauce) on the patties and cover with grated strong cheese to melt
3. if using a bun cut and let it brown a little in the pan
4. stack the cheese topped patties on the bread bun, with the beetroot salad between the two patties and top with salad leaves
5. serve with the coleslaw and fries to the side
