Warm Cauliflower Salad
Warming Turmeric Roast Cauliflower and Chickpea Orzo salad
You will need:
A cauliflower head chopped finely
1 onion sliced into thin rings
1 tablespoon of extra virgin olive oil
1 good teaspoon of turmeric
Chickpea Orzo
Mix lemon juice
1 mashed garlic
Handful of chopped parsley
1 tablspoon of sultanas
10 chopped dates
Handful of chopped coriander and parsley
1/2 a teaspoon of ground cumin
1 tablspoon of red wine vinegar
1 green chilli for some punch
Extra Virgin Olive Oil
Pine nuts or chopped pistachios to serve
Warming Turmeric Roast Cauliflower and Chickpea Orzo salad
This salad takes a bit of prep but it’s worth it and the flavour is superb. I love the chunky ‘zhoug’ a hot sauce originating from Yemen. It goes well with meat, fish, tofu or halloumi.
To make it :
1. Traybake the cauliflower with the onion, a tablespoon of extra virgin olive oil and turmeric (mine if from @seasonedpioneers
2. I used @profusionorganic chickpea Orzo which I just love , it takes 5 minutes simmering in water to make
3. Mix the lemon juice, mashed garlic, chopped parsley, sultanas, chopped dates, olive oil and use it to coat the orzo. Let it sit.
4. In a food processor make a Zhoug by blasting coriander and parsley, ground cumin, red wine vinegar ( I used @osuvinegar blueberry and pomegranate ACV) , a green chilli for some punch and a little olive oil.
5. In a bowl toss the cauliflower, orzo and the zhoug and sprinkle pine nuts or chopped pistachios over the top
